If a woman remembers while she’s bentching licht that she forgot to do a מלאכה (close the lights, for example), what may she do ?

Nothing. she is not allowed to do מלאכה once she starts bentching licht

Hold cup in right hand , make first brocha of הגפן, then put cup down on table make next 2 brochos of בשמים and האש, then put cup back into right hand and make the main brocha of havdalah : המבדיל בין קדש לחול

Does the Rebbe make havdalah the same way the Alter Rebbe says to do it in the Siddur?
